Bord Bia have released a list of incredible potato recipes on potato.ie as part of their campaign, 'Potatoes: Prepare to be Surprised'.
Our very own Jaz Keane decided to make one of them, and trust me, you're going to want to try it yourself.

Potatoes are a tasty, simply prepared, versatile, nutritional food eaten worldwide.
It's safe to say having a bag of potatoes in the home is the starting point to any meal.
And one dish our Jaz Keane wanted to try out was the One-Pan Lyonnaise Potatoes.
Ingredients
If you want to try it at home yourself, here's what you'll need:
- 4 potatoes, peeled and thinly sliced (e.g. Rooster potatoes) (approximately 600g)
- 1 onion
- 2 cloves garlic
- 20g butter (remove from microwavable recipe)
- 350ml beef stock (fresh stock works best but a stock cube is fine)
- 1tsp thyme leaves
- 200g stewing steak
Steps
Follow these simple steps to make the perfect One-Pan Lyonnaise Potatoes:
- Slice the potatoes. The easiest way to slice your potatoes thinly is with a mandolin. Alternatively take your time and use a sharp knife making sure your potatoes are of a similar size.
- Chop the onion into rings and finely chop the garlic.
- Take a medium/large frying pan and melt the butter and once sizzling add the onions and garlic, cook until soft. Remove from the pan.
- To the pan add a layer of potatoes, followed by the beef, the onions and the thyme. Repeat twice building up the layers finishing with a layer of potato.
- Pour in the beef stock and put on a lid on and simmer for about 15 minutes.
- In the meantime, preheat the oven to 180°c and turn on the grill.
- Place the pan under the grill to crisp the top of the dish, then serve.
Tip - replace the beef stock with chicken stock and the beef with left over chicken and cook in the same way.
Tips
Here are some handy tips to keep in mind when making any potato dish:
- When potatoes are cut into smaller pieces, they cook a lot quicker.
- Cooking potatoes with their, ‘skin-on,’ is a key time saving hack.
- Batch cooking of potatoes is simply done and leaves people prepared for the week ahead.
- Re-using leftover mash and boiled potatoes reduces food waste and can be used in a host of tasty dishes.
So the next time you decide to just throw your potatoes in a pot of boiling water, stop and think about how you could make your meal tastier.
